Speaking of shaking things up, did you know the liquid from your can of chickpeas is called aquafaba? This humble liquid is a superstar egg white substitute you can use in baking, cooking, or anything that calls for egg whites. And get this: in a cocktail created especially for DIG by the fabulous Tiffanie Barriere, aka “The Drinking Coach,” we learn how shaken aquafaba adds a frothy, nutty lightness to a delicious vodka sour. Who knew chickpeas could be so versatile?

But why stop there? Take the no-waste challenge up a notch by repurposing those lemon peels from your cocktail. You can turn them into a natural cleaning solution or dehydrate them for a zesty tea. It’s a small step, but when we all make little changes like these, we contribute to something much bigger.  Each of us plays a part in building a sustainable future, one delicious recipe and shared moment at a time. So, let’s savor the taste of good food and strengthen our bonds with every shared meal.

DIG’s AquaFaba Cocktail Recipe

Double pour of vodka

1/2 oz maple syrup

3/4 oz aquafaba

1/2 oz lemon juice

Pinch of cinnamon

2 dashes bitters

Ice for shaking

Dehydrated citrus wheel for garnish

Place all ingredients other than the garnish in a cocktail shaker
filled with ice and shake cold for 10 seconds.

Strain into a rocks glass over a large ice rock (or straight into a
coupe) and garnish with a dehydrated citrus wheel.
