Pumpkin Curry Stew

As the air turns crisp and pumpkins fill porches and markets, we’re excited to share a dish that captures the heart of the season.  And when you’re done with your porch pumpkins, turn them into something nourishing and tasty for the season! This Pumpkin Curry Stew was created for DIG by the SSA Group in Denver.

Pumpkin Curry Stew

Ingredients

12 oz pumpkin, diced (save the skin to roast later for garnish)
1 cup cooked chickpeas
1 ¼ cups onions, chopped
1 ¼ cups tomatoes, chopped
1 serrano pepper, slit lengthwise
½ tbsp fresh ginger, grated
3 cloves garlic, minced
1 cup kale, chopped
3 tbsp olive oil
1 tsp salt
2 cups vegetable stock
1 cup coconut milk

Spices

1–2 tsp red chili powder (adjust to taste)
1 tsp garam masala
½ tsp cumin
1 tsp coriander powder
¼ tsp turmeric
2 tsp tamarind paste
2 tsp brown or raw sugar
1 bay leaf
1 cinnamon stick


Instructrions

Prep the pumpkin: Dice the pumpkin into bite-sized cubes. (Peels and seeds can be tossed with oil, salt, and pepper, then roasted until crisp, delicious on top of the stew!)

Sauté aromatics: Heat oil in a large pot over medium heat. Add bay leaf, cinnamon stick, onions, garlic, ginger, and serrano pepper. Cook 3–4 minutes until onions are golden.

Add tomatoes & spices: Stir in tomatoes, chili powder, cumin, coriander, turmeric, and salt. Cook for 5 minutes until the tomatoes soften.

Simmer pumpkin: Add diced pumpkin and coat well with spices. Pour in vegetable stock, cover, and simmer 15–20 minutes until pumpkin is tender.

Add chickpeas & kale: Stir in chickpeas and kale; cook 5 minutes.

Finish creamy: Add coconut milk, tamarind paste, and sugar. Simmer 5 minutes. Remove bay leaf and cinnamon stick before serving.
